Preheat the oven to 400°F and line a baking sheet with parchment paper or lightly grease it with cooking spray.
Dry the chicken breast with paper towels, if you are going to tenderize it now is the time to hit it a few times to flatten it, and place them on the baking sheet.
In a small bowl, whisk together the olive oil and Dijon mustard. In another bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, thyme, Italian seasoning, salt, and pepper.
Brush each chicken breast with the olive oil and mustard mixture, then evenly press the breadcrumb mixture onto each piece, coating well.
Bake in the oven for 20–25 minutes or until the chicken reaches an internal temperature of 165°F.
