Spinach and Artichoke Egg Bowl

Ingredients
  

  • 1/4 cup cottage cheese
  • 2 tsp Parmesan cheese
  • 1 T artichoke hearts chopped
  • 1/4 cup chopped spinach
  • 2 eggs
  • 1/8 tsp garlic powder
  • 1/4 cup mozzarella cheese
  • Salt and pepper to taste.

Method
 

  1. Preheat the oven to 400 degrees.
  2. Grease or spray your favorite glass bowls. Put all of the ingredients into the bowl and stir.
  3. Next, bake for 15-20 minutes or until the eggs are set to your liking. If the cheese is not brown and bubbly, turn the oven to broil for a few minutes, keeping an eye on it so it doesn't burn.
  4. Take out of the oven and cool. Cover and store in the fridge for up to 4 days.
  5. Reheat however you like, such as microwave, oven, air fryer, etc.
