Spinach and Tomato Egg Bowl

Ingredients
  

  • 8 eggs
  • 1 cup cottage cheese
  • 1 cup sliced spinach
  • 1 cup sliced cherry tomatoes
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat oven to 400 degrees F.
  2. Grease four of your favorite single serve glass baking dishes.
  3. Crack 2 eggs into each dish.
  4. Pour in 1/4 cup cottage cheese, 1/4 cup spinach, and 1/4 cup tomatoes into each dish.
  5. Stir ingredients together.
  6. Sprinkle with salt and pepper to taste.
  7. Bake for 15-20 minutes or until the eggs are set to your liking.
  8. Cool and store in refrigerator four up to four days.
