Street Corn Chicken Bowl

Ingredients
  

  • Street Corn Chicken and Rice Bowl Recipe makes 4
  • 1 cup uncooked rice
  • 16 ounces of chicken breast cut into bites
  • 3 T taco seasoning
  • 1 can of corn
  • 1/4 cup Greek yogurt
  • 3 T mayo
  • 1 lime’s juice 1-2 T
  • 1/4 cup cilantro - more for garnish

Method
 

  1. Cook the rice according to the package instructions.
  2. While the rice is cooking, saute the chicken breast and add the taco seasoning.
  3. While that is cooking, make the cilantro lime crema by adding the Greek yogurt, mayo, lime juice, and 1/4 cup cilantro to a blender and blend.
  4. When the chicken is done cooking drain the corn and add it to the saute pan. Cook until it is starting to turn golden brown on the outside.
  5. When everything is cooked. Lay out your favorite meal prep bowls. I like these glass containers from Ello.
  6. Layer 1/2 cup rice, 1/4 cup corn, 4 ounces cooked chicken, 2 T cilantro lime crema drizzle, and then the cilantro for a topping. I would also add the other toppings listed above, especially the feta, we just didn’t have any tonight, either way these are going to be delicious!
