Method
- Dice the sweet potatoes and the onion and coat them in some of the olive oil. Season with salt and pepper to taste.
- In a sauce pan, drizzle the rest of the oil into the pan.
- Brown the ground chicken with the onion and sweet potatoes. Let the sweet potatoes cook and slightly caramelize.
- Drain any excess fat or liquids.
- Add the rest of the ingredients to the sauce pan.
- Stir and let simmer until the chili is heated through. Taste occasionally and adjust seasonings as you like.
