Sweet Potato Chicken Chili

Ingredients
  

  • 1 pound ground chicken
  • 1/4 large onion
  • 2 cloves garlic pressed
  • 15 ounce can of beans
  • 28 ounce can crushed tomatoes
  • 2 sweet potatoes medium diced
  • 2 cups chicken stock
  • 1 packet taco seasoning
  • 1 T chili powder
  • Salt to taste
  • Pepper to taste

Method
 

  1. Dice the sweet potatoes and the onion and coat them in some of the olive oil. Season with salt and pepper to taste.
  2. In a sauce pan, drizzle the rest of the oil into the pan.
  3. Brown the ground chicken with the onion and sweet potatoes. Let the sweet potatoes cook and slightly caramelize.
  4. Drain any excess fat or liquids.
  5. Add the rest of the ingredients to the sauce pan.
  6. Stir and let simmer until the chili is heated through. Taste occasionally and adjust seasonings as you like.
