
What Are Bacon, Broccoli, Cheese, and Egg Cups?
Meal-prepping bacon, egg, broccoli and cheese cups is one of my favorite ways to have breakfast! The recipe makes 12 and depending on your lifestyle and diet you might want to have 1 or 2 cups. I usually eat two of them, that way I start the day with some protein and it stays with me a bit longer throughout the day.
These breakfast cups are made by whisking together eggs with chopped broccoli, bacon bits, and some shredded cheese, then baking them in a muffin tin. They’re perfectly portioned for grab-and-go breakfasts or protein-packed snack, no fancy skills needed!

I would say you can prep this meal once and eat all week, but if you have kids with big appetites like mine you might need to do a mid-week meal prep like we do, which this recipe is perfect for! You can make a massive amount of breakfast cups in a very short amount of time!
If you want to prep only once a week double or triple the batch so you can make sure you have enough. This can easily be done by using multiple muffin tins or by taking the first round out and doing another one in the same muffin tin.
If you have people in your family who aren’t into cheese (I have one kid that does not like it) then you can just make a section of these without cheese. It is a really easy to customize recipe without having to do a lot of extra work or making a new meal. This saves so much time when you are meal prepping for kids!

Tips for the Best Bacon, Broccoli, Cheese and Egg Cups
Make sure to spray or grease your muffin tin really well or these will stick. The bacon provides a lot of grease itself when you are baking these, but the bottom where the egg touches will definitely stick if you forget to spray it.
To have the best luck with keeping them in the shape you want them in, wait until they have mostly cooled before trying to get them out. The egg needs to set before removing them otherwise they kinda fall apart. They still taste delicious they will just look a little funny.
Depending on the texture you and your family likes for the broccoli you might want to cook it before adding it to the mixture if you like it softer. I usually just dump it in because the bit of the broccoli is something we like so either way it will be great!
Another idea for easy removal of the egg cups from the muffin tin would be to use your favorite muffin liners. These could be paper or silicone depending on what you have on hand.

When you go to freeze this, do it in a single layer first and then put a totally frozen ones into a bag or the container above and then you can start to stack them.
Write on the container what you have in the bag and how to warm them up. This really helps when you have kids that can start to make their own breakfast. They just read the package and off they go!
These are easily reheated in the microwave for 30 seconds to 1 minute. I would suggest doing bursts of time so that you can have them the temp you want without over cooking them.

- First, preheat oven to 375.
- Cut the 6 bacon strips in half.
- Next spray muffin tin cups with cooking spray.
- Line each cup with a half slice of bacon so it makes a ring.
- Next place 1 T of cheese and 1 T of chopped broccoli into each of the 12 cups.
- Next crack one egg into each cup. Sprinkle with salt and pepper to taste.
- Bake for 12-15 minutes or until the egg is cooked to your liking.
