Bacon, egg, broccoli and cheese cups baked in a muffin tin, perfect for meal prep breakfast on a plate.

Bacon, Broccoli, Cheese, and Egg Cups

Ingredients
  

  • 12 eggs
  • 6 slices of bacon
  • 3/4 cup cheese divided
  • 3/4 cup chopped broccoli
  • Salt
  • Pepper
  • Cooking spray

Method
 

  1. First, preheat oven to 375.
  2. Cut the 6 bacon strips in half.
  3. Next spray muffin tin cups with cooking spray.
  4. Line each cup with a half slice of bacon so it makes a ring.
  5. Next place 1 T of cheese and 1 T of chopped broccoli into each of the 12 cups.
  6. Next crack one egg into each cup. Sprinkle with salt and pepper to taste.
  7. Bake for 12-15 minutes or until the egg is cooked to your liking.
  8. Eat right away or store in the fridge for an easy breakfast prep for the week!
