Ingredients
  

  • 1 cup quinoa
  • 2 cups broth
  • 1/2 tsp salt
  • 1/4 cup barbecue sauce
  • 8-10 cherry tomatoes sliced
  • 1/2 cucumber diced
  • 1/4 red onion diced
  • 1/4 cup cilantro chopped
  • 1 can black beans drained and rinsed

Method
 

  1. In a medium saucepan add the broth and the quinoa. Bring to a boil and then simmer on low with a lid on it for 15-20 minutes.
  2. The quinoa is done when the liquid is all absorbed.
  3. While that is cooking wash and cut the vegetables.
  4. Put the prepared veggies and cooked quinoa in a mixing bowl.
  5. Drizzle with barbecue sauce and stir in.
  6. Taste and add salt and pepper as needed.
  7. Drizzle with a little more barbecue sauce if needed.
