Method
- In a medium saucepan add the broth and the quinoa. Bring to a boil and then simmer on low with a lid on it for 15-20 minutes.
- The quinoa is done when the liquid is all absorbed.
- While that is cooking wash and cut the vegetables.
- Put the prepared veggies and cooked quinoa in a mixing bowl.
- Drizzle with barbecue sauce and stir in.
- Taste and add salt and pepper as needed.
- Drizzle with a little more barbecue sauce if needed.
