BLT Chicken Salad

Servings: 4 servings

Ingredients
  

  • 2-3 chicken breasts
  • 1 ½ tsp Mrs. Dash Original
  • ½ tsp salt
  • 3-4 bacon slices
  • 7 cherry tomatoes
  • ¼ red onion chopped
  • ½ cup mayo
  • 1 T lemon juice
  • Wrap, bread, crackers, cucumbers, or celery which ever you want to eat this with

Method
 

  1. Cook chicken by poaching it in water. Place chicken breasts in a sauce pan with water. Add in the Mrs. Dash seasoning and salt. Next turn water on and let chicken simmer until it reaches 165 when using a thermometer, if using thawed chicken this takes about 10 minutes. If you are using frozen chicken this can take 15 to 20 minutes depending on how thick they are.
  2. While the chicken is poaching, cook your bacon strips and crumble them. Then cut up your vegetables. Put these in a bowl. Next add the mayo and lemon juice, stir it in. Taste it and see if you think you need to add a couple shakes or salt and pepper. Start with a small amount, you can always add more but it is harder to take it away.
  3. When the chicken is done cooking, shred or chop it. Let it cool slightly then add it to the bowl. Let it finish cooling in the fridge or eat it warm.
  4. It is best to eat this salad in a couple of days.
