Easy Breakfast Burritos – Quick, Customizable & Perfect for Meal Prep

Easy breakfast burritos filled with eggs, sausage, cheese, and colorful vegetables, wrapped and ready to eat.

What Are Easy Breakfast Burritos?

Breakfast burritos are the ultimate breakfast meal prep.

The kids have loved these things since they were babies. I either mass produce these in one go or I make them for breakfast and make a few extra, think like 2-3 and put them in the freezer depending on how much space we have at the time, and how ambitious I am feeling. Meaning your meal prep can be as customizable as the actual burrito itself!

Breakfast burritos are a warm tortilla filled with scrambled eggs, meat, veggies, and cheese. They’re endlessly customizable and freezer-friendly, making them a go-to breakfast option for busy mornings. You can make a batch in advance and have breakfast ready all week long.

Breakfast burritos are great because you can add whatever you want to in the middle. When I am going to freeze these for breakfast meal prep, I wrap them in foil and write on the outside the name of the person who picked the insides.

This recipe uses simple, low-cost ingredients like eggs, tortillas, and whatever you already have in the fridge. Buying cheese and sausage in bulk and using leftover veggies keeps this recipe under $1.50 per serving! You can make sure you are optimizing savings by using the vegetables that are in season, check out this Winter Vegetable Breakfast Burrito for some ideas of what is in season in the winter too!

The kids can easily make these in the morning when we have them on hand. They get popped in the microwave for a few minutes, put in the oven, air fryer, or a combo of the microwave and a skillet to get it crisp on the outside but doesn’t take very long. The microwave and air fryer are great options if you are wanting your kids to make breakfast on their own this school year.

Why You’ll Love This Breakfast Burrito Recipe

Breakfast prep can be super easy when you are making these breakfast burritos. How can you make them easily? Well, there are two methods I use depending on my mood.

  1. Mass production – this method works well when I have some time and I am in the mood to meal prep. I buy a boat load of eggs and tortillas and make a ton of burritos. Then I wrap them in foil and stash them in a baggie or container in the freezer. This makes the mornings super easy and we can just reheat them as needed.
  2. I want have a meal prep, but I don’t want to meal prep method – sometimes the mood to meal prep in mass production just isn’t hitting. That’s ok because I can mini-meal prep! What does this mean? When I am making the burritos fresh for the morning I just make like 2-4 extra ones, then I wrap and store them in the freezer. This works well because it isn’t overwhelming but I am still saving myself time in the future! Its a win win!

Recipes like breakfast burritos are really nice because you can make it the way your family members want. We have a kiddo who isn’t into cheese, and that’s ok! All I do when I am making the breakfast burritos is leave the cheese out of some of them but put everything else in. When I wrap it up I just write on the side cheese and ta-da we have an easy breakfast that too no extra work to make it just the way the family wants.

The kids love these things. Not only are they delicious and make them want to eat breakfast but they can make it themselves! Show them how long to put them in the microwave for or they can toss these in the air fryer for a few minutes. They will have a healthy, filling breakfast and you didn’t have to lift a finger!

Because you can put whatever you want inside the burritos you can use up leftover proteins instead of just sausages or you can use up whatever vegetables you have in the fridge! This is a great money saving tip too.

Tips for the Best Breakfast Burritos

If you heat your tortillas just a bit before you fill them they will be less likely to tear when you go to wrap them. You can stuff a bit more of the goodness inside of them as well!

However, you do need to be aware of how much you are trying to stuff in there otherwise they do not roll very easily. You will get the hang of it though after a few of them! Check out this how to from the Kitchn for how to roll a burrito.

Make sure to cool the burritos all the way before wrapping and freezing them. This will prevent them from getting soggy.

Reheating in the microwave or air fryer will give you the quickest results. If you want a nice crispy texture on the outside leave them in the foil and toss them in the oven.

Meal Prep and Storage Tips for Breakfast Burritos

Batch cooking is easy when you are making breakfast burritos. See my two methods above and you can be prepared no matter your mood!

Wrap the cooled burritos in foil and label them with either people’s names on them or with the ingredients inside so you know who is going to like them. Then put them in a baggie for long term storage in the freezer.

Make sure to always label and date the food you put in the freezer. This way you won’t waste it by accidentally letting it get to old and freezer burnt.
