Broccoli Cheese Soup

Servings: 6 servings
Course: Main Course, Soup

Ingredients
  

  • 1/4 cup flour
  • 1/4 cup butter
  • 2 cups chicken broth
  • 2 cups milk
  • 1/4 -1/2 cup Velveeta cheese – can add more if you like
  • 1 bag of steamed broccoli florets
  • Garlic salt, and pepper to taste start with 1/4 tsp and work up from there
  • 1/4 tsp ground mustard

Method
 

  1. Cook broccoli by steaming it in the steamer bag if using frozen according to package instructions. If you are using fresh wash and cut it into florets. Steam or boil until it is fork tender.
  2. In a saucepan, melt butter, whisk in flour, cook for 1-2 minutes on low.
  3. Slowly stir in liquids heat until desired thickness, this may take a few minutes.
  4. Then add cheese and melt it. Add seasonings and broccoli stirring in until it is incorporated. Heat until everyting is warm to your liking, do not boil.
