Healthy dinner ideas are something we are always looking for and this one is exactly that! Bonus, it is a quick and convenient soup that you can always have the ingredients in the cupboard to make.

This recipe uses basic ingredients you probably already have at home broth, milk, cheese, and tortellini. Buying cheese tortellini in bulk or on sale makes this a filling and affordable weeknight dinner, coming in under $10 for the whole batch. You can also buy the ones that are shelf stable, they last forever and are a great price.

The cheese tortellini that you can find at Aldi are my favorite to use in this soup and it is shelf stable so you can always have it on hand to have a quick and healthy meal ready in minutes for the family! This soup can also be extended easily by adding a little more chicken broth or milk depending on how much soup you want to make. You can also easily make a little less by reducing the liquids by 1 cup each, it still makes an amazing soup, it is just a bit more hearty.

An easy meal prep tip is to make sure to chop or cut up items like the carrots, celery, and onions in advance. Chop 1-2 onions and put them in your favorite glass containers, next chop up some celery and do the same, and lastly dice some carrots and store in a container. This makes them so easy to put in recipes like these or to top a salad with!

If the knife cuts are already done, you will be able to make this soup and have it on the table in about 15 minutes!

This meal is amazing for many reasons and one of my favorite reasons is that it is a one pot meal! Yay! Cheer! Cheer! Cheer!

One pot meals are a busy momma’s favorite because there are not very many dishes to be done. Clean up can be done in a few minutes, and they are generally low stress recipes.

This is a soup that gives you cozy vibes without being too heavy. Because a lot of the liquid is chicken broth and the rest is milk it is a little lighter than other cream soups, meaning you have a feel good comfort food without the heaviness.

If you live a meat free life style no worries you can still make this soup! Just sub out the chicken broth for vegetable broth (budget tip, vegetable broth is just as flavorful but can be a little cheaper if you are wanting to save some money).

Tips for the Best Cheese Tortellini Soup

Tortellini cooks really quickly so it gets added at the end of the Cheese Tortellini Soup recipe. If you add it early no worries but it will get a little soggy. Any type of pre-made tortellini works in this soup so buy the one that fits your budget.

To make sure that the vegetables are cooking at the same rate, make sure to chop them all to about the same size.

Spinach is like the tortellini, it cooks quickly. If you add it at the start it will get a little slimy as the rest of the vegetables cook. Add the leaves at the end and you will be happier!

One pot and freezer friendly?! Oh Cheese Tortellini Soup you have my heart! Make everything as the recipe says but leave out the tortellini and the spinach. Cool it and put it in the freezer. When you want to make it thaw it out and then add the pasta and spinach. This will make it have the best texture overall.

Reheating the soup is the same as any other soup. Put it in your favorite glass container and microwave it or you can put it in a soup pot and reheat on the stove again.

Cheese Tortellini Soup

Servings: 4 servings
Course: Main Course, Soup

Ingredients
  

  • 1 carrot chopped
  • 1 stalk of celery chopped
  • ½ an onion chopped
  • 1 T butter
  • 4 cups broth chicken, vegetable, bone
  • 3 cups milk can use plant based
  • 1 ½ tsp Italian seasoning
  • Salt
  • Pepper
  • ¼ cup grated Parmesan
  • 1 small package of cheese tortellini
  • 1 large handful spinach

Method
 

  1. Chop some carrots, celery, and onion. Add them to a large stock pot with 1 T butter. Cook until they begin to get soft. Then add in one box of chicken broth (about 4 cups) then add in 3 cups of milk. Next use salt and pepper and some Mrs. Dash Italian seasoning, I just sprinkled in salt and pepper and used 1/2 a T of Italian seasoning and 1/4 cup grated Parmesan. Then I let this simmer together for a few minutes.
  2. Next I added a package of cheese tortellini and let them cook for about 5 minutes. Next I added a large handful of spinach, I let this cook down a little bit and checked the pasta.
  3. Serve and enjoy!
