What is Homemade Chicken Noodle Soup?
Easy, healthy, kid friendly meals are what we make around here. This quick and easy chicken noodle soup checks all those boxes and more!
To make this delicious chicken noodle soup quick and easy, poach the chicken before adding it to the soup. Doing this will make it so you don’t have that chicken bubbles (its just protein cooking, but the kids don’t love the look, and honestly I don’t either :)). When it is done cooking, chop it up, I like to small dice it so it is in every bite.
While the chicken is cooking start the rest of the soup. Chopping vegetables and sauteing them to give them a little extra flavor. Next add the rest of the ingredients and let their flavors work together. Lastly, add the egg noodles. Egg noodles cook really quickly so you won’t need to wait very long before you are ready to eat this cozy fall soup!

Why You’ll Love This Chicken Noodle Soup
Chicken Noodle Soup is one of those dishes that is comforting and nutritious. This soup features lean protein from the chicken breast, plus it has fiber and all the other goodness from the carrots and celery. The recipe calls for egg noodles but you could easily swap this out for other noodles like protein noodles or gluten free ones. Just make sure to check on them as they will have a different cook time.
You can easily prepare this Chicken Noodle Soup in 30 minutes or less if you have a few things meal prepped! This is a go to for our family when we need something quick, delicious, and nutritious, especially in the fall/winter months. Soup just hits a spot am I right?
Not only can you prep this in 30 minutes or less, but it can also be made in one pot! Who wants to make a dinner with 1,000+ dishes? Not this girl and probably not you either if you are following along with me :). Take my word for it, yummy food doesn’t have to be labor intensive and you can get this one done and on the table before you have to leave for your next practice.
Another major reason to love this meal is that it is very budget friendly. You can add more or less chicken depending on your budget and protein goals. You can also use chicken broth or use some bullion cubes if you have those on hand instead. The celery and the carrots are also cost effective vegetables to grab from the store.
Tips for the Best Chicken Noodle Soup
If you really want to add some flavor you can use bone in chicken and then take the bones out before you serve. The bones just add a touch more flavor than if you don’t have them. It may alter the cooking time though so make sure to take the temp and get it to 165 F.
As I mentioned above, this recipe is really forgiving so you can add more chicken, swap the noodles for gluten free, protein noodles, or whole wheat. You can add anything you want! They do have different starch levels though so it might change the thickness of the overall soup. The more starch available the thicker the soup will be.
You can also add more vegetables to this so every bite will be filled with chicken, veggies, and noodles. You can even add spinach to this soup if you want, although that kinda takes away from the classic part of it.
Meal Prep and Storage for Chicken Noodle Soup
To make enough to meal prep, I would suggest using a double amount of this soup if you are eating it for supper and meal prepping. After making the soup and eating supper I would suggest using your favorite single serve containers and splitting it up. This way it will cool properly and be able to be covered and stored in the fridge for up to four days.
If you want a longer shelf life you can put this in the freezer. The SouperCubes mentioned above will help with portion sizes and freezing evenly. Otherwise just freeze in a freezer baggie and store it all in one spot for a quick meal when you need it for the whole family!
Reheating this is easy. If you have it in the fridge just warm it up in the microwave or on the stove top. If you have it frozen you can easily put it in a pan on the stove top. If you need to you can always add extra broth as the noodles will soak it up.

Ingredients
Method
- Poach the chicken in water in a saucepan by filling the saucepan with water and covering the chicken with it. Add a good sprinkle of Mrs. Dash’s seasoning, about a 1 tsp. Then simmer the chicken until the internal temperature reaches 165 F. While the chicken is cooking, prepare the vegetable cuts. Then put the olive oil in a large pot and put the carrots, celery, and onions in. Next, saute them for a few minutes until they develop a little flavor and the onions start to turn translucent. Pour in the chicken broth and simmer until the vegetables start to soften, add the seasonings. When the chicken reaches 165 degrees internal temp, cut it into small cubes. Then put with in the soup. Test the vegetables to see if they are getting soft. When they are add the noodles. Simmer the soup until the noodles have the texture you prefer. Dish up and enjoy!
