To make sure your butternut squash is going to cook all the way make sure to dice it small. This will also help to make sure each bite of your egg bowl has a little bit of squash in it making for even and equal bites.
Meal prepping is great but not if you don’t want to eat the food you prepped. Make sure you want to keep eating it by adding a little more flavor. You can do this by roasting the squash before you put it in the glass containers and adding the eggs. It does add an extra step but you might find it is well worth it!
When you make food you get to season it the way you want. The recipe lists some ideas of spices as well as amounts, but really it is your kitchen and your taste buds that are eating it so season to your liking! If you want it a little hotter you can easily add the hot sauce to the eggs while it cooks or sprinkle the squash with some red pepper flakes or paprika while it cooks.
I mentioned it above but to help you hit the macros you want or keep things low in fat you can use low-fat cottage cheese or take out the egg yolks. If you are taking out the egg yolks you might want to add another egg to each bowl.
If you are needing the fat in your macros or if you are wanting a more creamy texture you can use the full fat cottage cheese and the whole egg. This is what I do and the egg bowls are perfectly textured and stay moist while reheating.
