Ingredients
Method
- Preheat oven to 425.
- Prepare glass baking dish or dishes by spraying with cooking spray. I use single serve ones and split this recipe into both of them equally.
- First prep the jalapeno, slice half of the pepper and set aside. Dice the remaining portion of the pepper.
- Put cottage cheese in the bottom of the baking dishes, 1/2 cup each.
- Next, place 1 T of bacon bits and jalapeno on top of cottage cheese in each dish.
- Crack two eggs into each dish, whisk everything together.
- Sprinkle with salt and pepper to taste.
- Next sprinkle 1 T of shredded cheddar cheese on the top of the egg mixture. Carefully place jalapeno slices on top.
- Bake in the oven for 12-17 minutes or until the mixture is set to your liking.
