Sheet Pan Breakfast Quesadillas

Servings: 6 servings
Course: Breakfast

Ingredients
  

  • 6-8 tortillas
  • 8 eggs
  • 1/2 pepper finely chopped
  • 3 green onions sliced
  • 1 small can green chilis
  • 1/2 pound bacon cooked and crumbled
  • 1 cup cottage cheese
  • 1/2 cup Greek yogurt or sour cream
  • 1/2 cup shredded cheddar cheese

Method
 

  1. Preheat the oven to 350 degrees.
  2. Spray a jelly roll pan with cooking spray or lightly grease it.
  3. Next lay 6 tortillas down on the sheet pan to cover the bottom, some of it will extend over the sides, about half of it will be over the edge.
  4. Scramble the eggs in a saute pan until they are cooked to your liking, season the way you like it.
  5. Next cook the bacon to your liking.
  6. Layer the scrambled eggs, cottage cheese, green chilis, and bacon over the tortillas, kind of stir them around to mix it all together.
  7. Next sprinkle with chopped bell peppers and onions and shredded cheddar cheese. Salt and pepper as desired.
  8. Next place the another tortilla in the center of the pan on top of all the filling. Fold the hanging portions of the tortilla in to the middle.
  9. Next place another cookie sheet over the tortillas to hold them in palce.
  10. Bake for 10-12 minutes or until the tortillas have turned golden brown.
  11. Serve with Greek yogurt, salsa, chopped chilies, olives, etc.
