Preheat oven to 350 degrees F.
First, pare and chop the apples. I used Gala, but Granny Smith would add some tartness. Set to the side.
Cream the butter, applesauce, white sugar, and brown sugar together. Next, add the eggs and mix in, I used my hand mixer.
Add the baking powder, baking soda, nutmeg, cinnamon, and apples. Mix well, I switched to a rubber scraper at this point to avoid over-stirring.
Create a well in the liquids and add the salt, vanilla, and flour.
Gently stir in until mixed. Do not over-stir.
Pour into a prepared loaf pan. If using pecans sprinkle over the top.
Bake at 350 for 55 -65 minutes. Check with a toothpick at 55 minutes to see if it comes out clean. If it does not keep baking it.
