Buffalo Chicken Salad

Ingredients
  

  • 4 chicken breasts
  • 1/2 cup buffalo sauce
  • 2 T olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp dill
  • 8 cups salad greens, spinach, etc.
  • 8 cherry tomatoes sliced
  • 1 cucumber sliced
  • 1/4 red onion chopped
  • 1/4 cup ranch or blue cheese dressing
  • 2 T blue cheese crumbles* optional
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat oven to 375.
  2. Season the chicken with the garlic powder, onion powder, salt, pepper.
  3. Put the chicken breast on a pan and bake for 20-25 minutes or until a thermometer reads 165 F internally.
  4. Take chicken out of the oven and shred it. Toss in a bowl with the buffalo sauce to coat it.
  5. While the chicken is cooking, assemble the salad in bowls or on plates.
    This is a really easy to meal prep meal too, just put the salads in containers.
  6. Top evenly with the buffalo chicken mix and dressing of choice.
