Easy Chicken Noodle Soup

Ingredients
  

  • 2 chicken breasts
  • Mrs. Dash seasoning
  • Water
  • 2 carrots diced
  • 2 ribs of celery sliced
  • 1/4 onion chopped
  • 1 T olive oil
  • 6 cups chicken broth
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp dried thyme
  • 2 cups egg noodles

Method
 

  1. Poach the chicken in water in a saucepan by filling the saucepan with water and covering the chicken with it. Add a good sprinkle of Mrs. Dash’s seasoning, about a 1 tsp. Then simmer the chicken until the internal temperature reaches 165 F.
    While the chicken is cooking, prepare the vegetable cuts. Then put the olive oil in a large pot and put the carrots, celery, and onions in. Next, saute them for a few minutes until they develop a little flavor and the onions start to turn translucent. 
    Pour in the chicken broth and simmer until the vegetables start to soften, add the seasonings. 
    When the chicken reaches 165 degrees internal temp, cut it into small cubes. Then put with in the soup. 
    Test the vegetables to see if they are getting soft. When they are add the noodles. Simmer the soup until the noodles have the texture you prefer. 
    Dish up and enjoy!
