First start your water to poach your eggs in a medium saucepan, bring it to a simmer.
Cut the avocado in half. Take the pit out of it and sqeeze the green part into a bowl.Mash it and add salt and pepper if desired.
Crack the eggs individually into a small bowl. I like to use one egg in a custard cup at a time.
Take a slotted spoon and swirl the water with it. In the middle of the swirl, place the edge of the custard cup and let the egg fall into the water.
Cook for 4-5 minutes, or until the egg is set to your liking.
While the eggs are cooking, put the corn into a frying pan with 1 tsp oil and char it. This will take 2-3 minutes.
Roast the bell pepper over a flame on the stove top, or broil it for a few mintues in the oven to char the skin. Dice it and add to the corn pan.
Begin toasting the sourdough bread, or put it under the broiler. If doing this it is easy to burn.
Once everything is prepared assemble the Fancy Avocado Toast. Lay the bread on a plate. Spread with avocado mash. Lay two poached eggs on top of the avocado. Sprinkle with salt and pepper if desired. Top eggs with a spoonful of corn and bell pepper mix, feta cheese, tomato slices. Enjou!
