In a medium bowl, mix the Greek yogurt with honey or maple syrup and vanilla extract. Stir until well combined.
Wash and slice the fruits as needed. If using frozen berries, make sure they are slightly thawed for easier mixing.
In popsicle molds, layer the yogurt and fruits. Start with a spoonful of yogurt, then add a layer of mixed fruits. Repeat the layers until the molds are filled, ending with a yogurt layer to help the popsicles hold together.
Insert popsicle sticks into the molds.
Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.
To remove the popsicles from the molds, run the outside of the molds under warm water for a few seconds to loosen them.
