Homemade lemon bar protein balls with a yellow color, topped with a dusting of powdered sugar.

Lemon Bar Protein Balls

Servings: 8 balls

Ingredients
  

  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1 lemon zest
  • 1 lemon juiced
  • 1/4 cup maple syrup
  • 2 T melted coconut oil
  • 1/2 tsp vanilla extract

Method
 

  1. Get out a medium sized bowl. Put in the almond flour and protein powder, mix together.
  2. Wash the outside of the lemon. Zest it into the mixing bowl. Then cut the lemon in half and squeeze the juice out of it into the bowl, be careful to keep the seeds out. Then add the maple syrup, melted coconut oil, and the vanilla.
  3. Stir until it is well combined.
  4. Next use a cookie scoop to portion the mixture into 8 balls.
  5. Chill or freeze.
  6. Optional: Cover in a light dusting of powdered sugar for a final touch.
  7. Store in the fridge or freezer until ready to use.
