Sweet Potato Breakfast Hash

Ingredients
  

  • 2 large sweet potatoes medium diced
  • 1-2 tsp salt
  • 1-2 T oil
  • 1/2 pound of bacon chopped
  • 1 clove garlic
  • 1 onion medium diced
  • 1 bell pepper seeded and medium diced
  • 1/4 – 1/2 tsp black pepper
  • 4 eggs
  • 1-2 green onions sliced for garnish

Method
 

  1. Prep the vegetables by washing them and cutting them into medium-diced squares.
  2. Heat a saute pan to medium heat and put in the oil.
  3. Drop the diced sweet potatoes into the pan, sprinkle with some of the salt and pepper, and begin cooking them. Once the potatoes have started to soften, put the bacon, bell pepper, onion, and garlic in the pan with them.
  4. Saute these vegetables until they are starting to turn brown on the outside and the bacon is to the crunchiness you like.
  5. Next, make 4 wells in the vegetable mix. Put one egg into each of the wells, and sprinkle with salt and pepper.
  6. Cover and let eggs cook until they are done to your liking.
  7. Top dish with sliced green onions.
  8. Enjoy!
