A Chicken Sheet Pan meal is a one (or more) pan dinner made by roasting cubed chicken breasts and a mix of vegetables all at the same time! It’s a hands-off, quick cooking method that keeps your cleanup easy and the meal is full of flavor.

If you’re not sheet pan meal prepping, you’re seriously missing out. Sheet pan meals take minutes to prepare and about 20 minutes to bake/roast in the oven. They take minimal dishes to prepare too, saving you time and energy in the kitchen! In total, I used one cutting board, one bowl, one knife, and the pan(s) to prep this meal.

Tips for The Best Chicken Sheet Pan Meal

For our family the best Chicken Sheet Pan Meals are made by seperating the vegetables from the meat and actually using two pans. I do this for a couple of reasons. 1. We like the potatoes and carrots more cooked than the other vegetables, 2. I personally don’t like all the chicken juice on the veggies so that goes on a different pan, 3. We need to use more than one pan anyway because the kids love this and they eat a good amount of it meaning we have to make a lot!

Even if you are using mulitple pans you will want to cut the veggies smaller so they cook faster. Fluffy vegetables like broccoli can be a little bigger because it doesn’t take as long to cook as the other items on the recipe though.

If you are feeling like there is a lot on the pan then you might want to use more than one. If you overcrowd the pan it will steam the vegetables rather than roasting them. Which is a healthy way to cook food but might not be the texture you are wanting.

To make sure all the ingredients on the chicken sheet pan are going to get nice and crispy make sure everything is coated in oil and seasoned well.

Baking at a higher temperature will also ensure you get a perfect textrue. Roasting happens at a higher temp so it will crisp the edges and make your food amazing. Start at 425 and you will be amazed at the texture/flavor that can develop!

Meal Prep and Storage Tips for Chicken Sheet Pan Meals

Make this meal and eat it for dinner then package it up in air tight containers to have for a yummy meal prep this week. I suggest containers like these to keep your food fresh while being able to easily reheat them in the glass.

Servings: 4 servings

Ingredients
  

  • 4 chicken breasts cubed
  • 1-2 T favorite chicken seasoning blend Mrs. Dash Original is good!
  • 1-2 T olive oil
  • 1 bell pepper large dice
  • 1 onion large dice
  • 2-3 carrots sliced
  • 1 head broccoli cut into florets
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp garlic powder

Method
 

  1. Get out two sheet pans, cover with foil for easy clean up or not and just use the regular pan.
  2. Take cubed chicken breast and cover with 1 T olive oil.
  3. Sprinkle with your favorite seasoning, I like Mrs. Dash Original seasoning, and add my own salt.
  4. Stir this in and make sure all pieces are covered. Next lay these out on one of the cookie sheets.
  5. Then mix together the vegetables, 1 T olive oil and garlic powder, salt and pepper. Spread this out over the other cookie sheet. It is best if you can keep these pieces separated from each other, they will actually roast and not steam.
  6. Put both pans into a 425 F degree oven for 20-25 minutes or until the chicken temps 165 internally. Check the vegetables and keep cooking until they are to your liking.
