I got you! Make one of these four quesadilla varieties! Or make them all and stash them in the freezer for the fastest meal prep of your life.
Any of these varieties can easily be made and then stored in the freezer so all you have to do is warm them up.

If you are going to stash them in the freezer, I would suggest using a piece of parchment paper between each of them and storing them in a glass container like these or a Stasher bag like these so that they do not take on flavors from the freezer. There are other containers that are great options too, these are just my favorites because they really do prevent flavor transfers and keep you wanting to eat your freezer food.

Veggie Quesadillas
These Veggie Quesadillas are packed with guess what, vegetables! The carrots in these make them slightly sweet and the peppers and cheese give that savory component. They have minimal spices so they are extremely fresh tasting and are so delicious.
Dip them in salsa, guacamole, sour cream, whatever, and you are going to be in heaven. As said above, you can easily make them and then store them in the freezer for a healthy lunch or dinner option at a moment’s notice.

Easy Cheesy Chicken Quesadillas
This quesadilla recipe was a favorite of my sisters and me when we were younger. The chicken in the recipe can be canned, poached, sauteed, or grilled, whatever your favorite chicken prep is!
I usually make these when I want a quick meal so I used canned chicken. Doing this means these quesadillas can be made in literal minutes. They are also extremely easy for the kids to put together themselves, they just might need help with putting them in the oven.
Serve with Cilantro Lime Rice as a side or some delicious black beans and you have a meal in minutes!

Black Bean and Corn Quesadilla
Next up, and my newest obsession, are these Black Bean and Corn Quesadillas!
These are another healthy and quick meal that you can put together in minutes. If you make a lot of these at once for meal prep you can bake them instead of putting them in the skillet. After assembling them, put them on a cookie sheet and place in the oven. Wait a few minutes turn them over and wait a few more. Take them out of the oven and let them cool entirely. Then put parchment paper in between them and pop in the freezer! I have seen these at the store for a few dollars a piece, you just made your own for pennies compared to that!

Garbage Bowl Egg Quesadilla
I love this recipe because it is something you can make no matter what is in your fridge or pantry.
I called them Garbage Bowl for exactly this reason!
If you are like me you will have several bits and pieces of random vegetables and proteins in the fridge. It isn’t always enough to make a full dish of something else, I don’t want to go to the store, and it is dinner time.
Here is my solution:
Take all of the bits and pieces, throw it all on the cutting board, chop it all up, whisk up an egg, throw it all in a pan, add cheese, then add a tortilla and bam. You have now used up all of the leftovers, saving food and money, and you have an amazing healthy quesadilla jam-packed with vegetables and protein.
